For 1 cup (8 oz / 200 g) uncooked rice, bring 2 cups (16 oz / 500 ml) water and 1 teaspoon salt to a large saucepan. Do not pour the rice immediately; Pour in slowly (don’t stir as it pours.) Then stir gently, then cover the pot, reduce the heat to a simmer, and simmer for 15 minutes.

She says that the slower, more natural release is vital for the rice to cook properly.

For all of the instructions below, place the rice and other ingredients directly into the base of the pressure cooker. The ingredients can be doubled or tripled as long as, to be safe, it does not exceed half the volume capacity of the pressure cooker.

Bring the pressure cooker to high pressure. Cook on high heat for 18 minutes in a pressure cooker; 20 minutes if it is an electric or non-standard stove. Natural release. Fluff the rice with a fork.
What Is Arborio Rice?
When the rice grain is husked, the rice is brown in color. This is what is known as wholemeal or wholemeal rice. Further refining to make white rice removes the brown exterior.

To complete a single serving of 150 g (1 cup / 4 oz) of parboiled long-grain white rice: Start with 50 g (⅓ cup / 2 oz) of uncooked long-grain white rice.
The Dietary Guidelines for Americans (2015-2020 edition, Appendix 3) suggest the first smaller amount. The largest amount is provided by Weight Watchers® and other diet resources as of 2015, and while it’s probably the closest to the minimum people will have, it likely still seems poor to many.
The following is based on a 150g (1 cup / 4oz) serving for long grain white rice. However, it does not allow generous portions, second helpings or leftovers. To allow for this, or when cooking for large quantities, it’s probably wise to plan for a few extra servings.
Store dry, uncooked rice in a sealed container in a cool, dry place. With the exception of brown rice, rice will keep indefinitely.

Refrigerate leftover cooked rice in a sealed container for one hour after cooking; Don’t let it sit out any longer – there are documented cases of food poisoning that have occurred from cooked rice left out of the fridge (see nutritional notes below). Use it for 3 to 5 days.
You can freeze cooked rice for up to a year. Freeze it in meal-sized portions, rather than one big chunk, so you can pull it out of the freezer to add to soups or casseroles, or even just to serve on the side.
